Jaylen's Jam Journey

How it started: Disruptus
During a fun after-school program activity, we were tasked to create an innovative food recipe utilizing guava, which was an undervalued resource available from our teacher's guava tree.
I came up with a tasty guava jam recipe that everyone enjoyed! So much that my teacher (now director) , offered me a job to create jam jars for him when Guavas were in season.

Year One
Despite having a great recipe, I was constantly faced with new challenges. Mr. Casey brought me, a busy high schooler, 20-40 lbs of Guavas per week, which had to be processed quickly since guava go bad easily.
Never in my life had I had to deal with something like this, and often needed help from family and friends in order to keep up. Eventually, we realized we could just freeze the guavas. Life Lesson learned.

Year Two
My second year was not any better. I had more orders requested due to higher demand, but due basic cookware from family, it was difficult to keep up.
I managed to borrow more equipment and created an efficient set-up in which I could make more jams in less time. However, in the end, I up losing inventory due to the new processing setup. I had to further refine my recipe to make my product faster yet still tasty. Things never cease to surprise me.

Year Three
My third year was much more better this time around. We were able to obtain inexpensive materials and had quicker progress due to my past experience!

I was commissioned by Casey Sanchez to make my Guava Jam for his clients at a Commercial Painting Company which was a cool opportunity!

Final Thoughts (for now!)
My next goal is to create jams using pink guavas! I always need to be open to experimentation, especially if some of my plans did not succeed. Plus, maybe the pink guavas will have a better taste than the yellow ones.
Even if I'm busy with high school, I am also considering starting a new business that features my personal art style on shirts. Of course, I will also treat myself to some of my guava snacks along the way.
